Yellow cake mix (prepare as directed)
Food coloring gel (pink, blue)
Edible gold stars
2 cups mini chocolate chips
1 cup heavy cream
Prepare your yellow cake batter as directed.
Insert a toothpick into the blue food coloring gel, coating it about halfway. Place the gel into batter and swirl it around, getting as much off the toothpick as possible. Repeat with the pink food coloring gel. Using a spatula or spoon, gently mix the batter to create cosmic swirls until you see some purple coloring (mix of blue and pink). Careful not to over mix or you will end up with all purple batter.
Fill you cupcake pan 2/3 full for each cupcake. Bake according to cake mix directions.
When your cupcakes have cooled, prepare the chocolate ganache. Place your chocolate chips in a large mixing bowl. Put your cream in a small pan over medium heat. Stir cream until it begins to boil, then remove from heat. Gently add your hot cream to the chocolate while stirring. The chocolate will melt. The ganache should be smooth and shiny when ready. Let cool 15 minutes.
Carefully spoon the ganache on top of your cupcakes. Top with gold stars and enjoy!
